Fancy Katsu Sando Ketchup

Step 1- Thinly slice 2 yellow onions, 3 cloves of garlic and one quarter sized piece of ginger. Add to a sauce pan on medium high heat, season with salt and one tablespoon of neutral oil. Cook covered for 10 minutes or until the liquid starts to release. Reduce heat to medium low and cook, stirring occasionally for 2 hours or until the color turns a deep golden brown.

Step 2- Turn the heat to high and deglaze with 1/2 cup of good whiskey, 2 tablespoons of soy sauce and one tablespoon of Worcestershire. Cook until the liquid evaporates and remove from heat.

Step 3- To a blender or food processor, add the caramelized onions, 1/2 cup of apple cider vinegar, 1/2 cup of ketchup, the spice mix (as shown in the video), and then blend until smooth.
