Peach Compound Butter Grilled Oysters

First, prepare the Stone fruit butter: Combine all of the ingredients (green onion whites, Parmesan, ginger, Serrano peppers, garlic, pitted peaches, pitted nectarines, softened butter, lemon zest, coriander seeds, salt, brown sugar) in a food processor and pulse to combine. Check for seasoning; it should be salty and slightly sweet with a punch of spice. To grill the oysters, use a SUPER hot grill.
