Mango Slushy with Ginger Simple Syrup
15 mins prepServes 3
If your summer has been hot, you're going to want this cooldown classic! Made easy with world-class juice, this recipe features a homemade ginger simple syrup and a refreshing mango and orange slushy, optionally spiked with tequila.
For the Ginger Simple Syrup: Combine 1 cup sugar, 1/2 cup water, 1 thumb-sized sliced ginger, and the peels and juice from one lemon and one grapefruit. Heat until the sugar is combined, then cook on low heat for 1 minute (or microwave until it bubbles). Allow to steep until cooled, then strain.
For the Mango & Orange Slushy: In a blender, combine 3 deboned mangoes, 1 cup orange juice, 1/4 cup of the prepared simple syrup, 1/2 cup tequila (or more, to preference), 1 teaspoon togarashi powder, 1 pinch of mint, and the juice of one lemon/lime/grapefruit. Blend until smooth. Check the balance of sweetness to acidity and adjust as needed. Chill until ready to use. If you aren’t using an ice cream/slushy machine, transfer the cooled mixture into ice cube trays and freeze (the alcohol should keep it from deep freezing). Once frozen, blend the cubes until smooth. Serve with a splash of sparkling wine or sparkling water and a little sprinkle of togarashi.
