Fried Brie (Gangster Style)

CHEESE: Score the brie cheese into 1-inch cubes and let sit in the freezer for 30-45 minutes, but do not freeze solid. Prepare a standard triple breading station consisting of seasoned flour, whipped egg wash, and panko breadcrumbs. Gently coat the cheese in flour until completely dusted, then shake off the excess flour and transfer to the egg wash. Gently toss until the egg wash has covered the whole thing, then drip off the excess and transfer to the breadcrumbs. Coat completely, then pop it back in the freezer for another 15-20 minutes.

MISE: Peel and thinly slice one shallot in half and then again longways to form thin strips and add to a separate bowl. To that, add in 2 cups of grapes and season with salt and chili crisp. Toss the grape mixture and broil on high for 15-20 minutes. Cool and reserve.

COOK: Heat vegetable oil to 375°F (or medium-high heat) and fry the cheese scored side down first until golden brown, then flip and repeat with the other side. Carefully remove from heat and rest on a bed of thyme.

PLATE: Serve with the roasted grapes, some extra chili crisp, and a spoon of apple mostarda.
