Meatballinβ spicy style I forgot to film the braising part so donβt hate me. By blending stale bread and milk together you give the meatballs some structure that will absorb liquid as itβs released from the meat. This gives the juice a place to re-settle which will help prevent overall shrinking and prevent dense lumps from forming. I like to mix mine with Parmesan cheese, garlic, dried or hard herbs like thyme or rosemary, salt and black pepper then blend into a paste. 2 Meatballs: thereβs many ways to skin this cat but I like equal parts beef, pork and veal. To this i like to add diced white onion, sambal chili, more Parmesan, one egg per pound of meat, diced parsley, salt, helllllla black pepper and about 1/6 panade to meat ratio. Mix this thoroughly for a few minutes till the mixture starts to stick to itself. The more you mix it, the more held together the balls will be. Let the mixture rest in the fridge for 45 minutes and then form them into the desired size. I like mine slightly smaller than a tennis ball. 3 Cook: in a roasting tray arrange the balls so that they have a small bit of distance between them and roast @415f for 25-35 minutes or until the tops of the balls start to deeply caramelized. Add to that enough canned tomatoes to cover the balls then add in 1/10 red wine to tomato and cover with foil then return to the oven and lower the temp to 350f and cook for 1 hour. 4 serve: no rules here, serve with spaghetti or on a sandwich but just make sure you took this much time to make it for someone that you love π€π«Άπ½ sorry I forgot the braising part lol.
