Michelada Verde

1. **Agua Chile Verde:** To a blender, add the juice of 1 grapefruit, 3 limes and 2 lemons, 2 halved Serrano chili, 1 kiwi, 1/3 of an English cucumber, one metric handful of cilantro and a pinch of salt and blend on high until smooth.
2. **Tajin:** Add a pinch of nacho chili, achiote powder, a tiny tiny pinch of MSG, citric acid, sumac, salt and pepper to a plate and mix. It should be acidic foreword and salt second.
3. **Cocktail:** Rim the edge of a glass with lime and then gently rub the Tajin mixture around the edge of the glass. Fill the glass with ice and add in 1 part agua chile to 5 parts beer. Add a floater shot of mezcal or tequila for bonus points.
