Instructions

1. MISE: Pick 3 large cloves of garlic, two bunches of basil, halve 1 lemon, and cube up 1 cup of Parmesan.
2. PROCESS (Pesto): In a food processor, add the basil, garlic, lemon juice (from 1/2 a lemon), a pinch of salt, and the cubed Parmesan. Blend while slowly adding in 1/4 cup of olive oil. Once the mixture is pulsed, add in 1/2 cup of cashews and continue blending until it reaches a creamy consistency. Remove the pesto and cover with plastic wrap until needed.
3. PASTA: In salted water, cook your favorite pasta (fusilli is suggested here). Make sure to slightly undercook the pasta. Before draining, ladle out 1 cup of pasta water and set aside. Add the cooked pasta and the reserved pasta water to a pan and heat on medium-high. Stir in the prepared pesto and cook until the pesto coats the pasta, around 1-2 minutes. Serve immediately with a generous amount of fresh Parmesan.
