Pasta al' Limone with Caviar

Step 1 - Mise en place: As thin as you can, slice 3 cloves of garlic, slice 1/4 cup of chives, and finely slice 8 thin pieces of lemon.

Step 2 - Pasta: Cook any long noodle (linguini recommended) in salted boiling water for 80% of the cooking time. You want to undercook it. Strain the pasta and reserve about 1/2 cup of pasta water to use the starch for thickening the sauce.

Step 3 - Sauce: In a saucepan, add about a tablespoon of neutral oil and heat to medium-high. Add in the sliced garlic and stir for around 30 seconds, then add in the lemon slices and continue cooking for another minute. (Optional) Deglaze with a cup of sparkling wine and reduce by half. Add in the pasta and the 1/2 cup of reserved pasta water and continue cooking for a minute or until the liquid starts to thicken slightly. Stir in 1/4 cup of cold cubed butter, freshly grated Parmesan, and the chives. Remove from heat and stir until the butter incorporates and combines. Add in a squeeze of fresh lemon juice and check for salt.

Garnish with fresh Parmesan, lemon zest, and a heaping spoonful of good quality caviar.
