My take on 🐓 thiccness… 🧨BE HONEST… do yall make your own stock? Note: I wanted rich roasted brown stock for the food I have planned but if you wanted a more mellow tone and clear broth then just ignore the roasting portion of the recipe ✌🏽 🧨RECIPE🧨 Step 1- add 2 carrots cut into thirds, one halved yellow onion and 8 smashed garlic cloves to a sheet tray. If using a whole chicken, once cleaned, clip the bones into golf ball sized pieces- not required but the more broken down the more surface area for roasting. Arrange the pieces with the vegetables so that any pieces with skin are facing upwards. Season with cooking oil and a little bit of salt and roast @450f until golden brown. Step 2- add the roasted chicken/vegetables to a pot and add enough water to cover. Bring to a simmer, then skim the white foam as it accumulates for the first 10 minutes. Continue cooking for 1.5 hours, then add in 2 teaspoons of whole black peppercorns and continue cooking for 30 minutes. Once the liquid has reduced by 2/3, strain off the solids, season with salt, and a pinch of msg and store until needed ✌🏽 Love y’all, drop a 🐓if you got this far #explore #food #chicken #cookingbasics #howto #tiktok
