🌶SPICY SHRIMP GRILLED CHEESE🌶

1 MISE: pad the shrimp dry and season with anything that chars well. I used the vietcajun from spiceology. Slice up poblanos and red chilies into 1/4” pieces and reserve. Slice one white onion as thinly as possible and reserve.

2 SAUTÉ: On medium high heat, add in a tablespoon of vegetable oil and fry the shrimp until caramelized and orange- remove from the heat and reserve. In the same pan, add in your peppers and onions and cook until tender. While the pan is hot deglaze with @coronausa . Cool until the liquid has reduced out then remove from heat and add to the cooked shrimp. Check for seasoning and reserve.

3 ARRANGE: Add a tiny bit of mustard to the inside of your bread, then cheddar, then Swiss, then your shrimp/onions/pepper mixture in the center, more cheddar and more Swiss then top it off with the final piece of bread. Optional but I like to coat the top and bottom pieces in Mayo for an extra crusty grilled cheese.

4 COOK : On medium high heat add in you Sandy and allow to cook until that first side is very toasty and brown. Flip and cover with a pan weight. If you don’t have one cover with a piece of parchment and weigh it down with another pan or pot with water in it. Cook until the cheese starts bussin out the sides and then pull off the heat.
